It would be nice if we could choose between different check-off methods...

• Tap and hold for half a second (or so)
• Traditional check-boxes for a targeted area
• Swipe over item (ie. strike-through) or swipe item away
• I'm sure there are others

With additional options such as a delay as Rowen suggests to stop things moving immediately after having been checked, which also allows for multiple items to be checked off in quick succession.

tap-and-hold would allow for multiple items to be selected (as in the android gallery and many other apps), which would be a bonus.

This feature would allow us to move our shopping list items into our 'delivery list' quickly, which then gets checked off when things arrive by mail.
